Ingredients:

6 oz. flounder or sole per person

1 tsp. low fat mayonnaise

1 tsp. grated parmesan cheese

1 cup fresh spinach

Directions:

Wash and destem the spinach.  Put into a large pot.

Line a cookie sheet with aluminum foil, spray with “Pam”

Lay down the fillets.  Put a skim coat of low-fat mayonnaise on each fillet.

Sprinkle with parmesan cheese.

Put under the broiler for about 4 minutes.  (After the first 2 minutes, turn on the spinach.)  Do Not Turn the Fillets.

The spinach and fish will finish together.
